Where we trade

Ingliston, Edinburgh · June

Royal Highland Show

Scotland's biggest outdoor event. Four days, 250,000 guests and six Apex bars across the site, including the Members Pavilion and the Lawn Bar.

Branded bar units, big lawn seating and stock planning built around the show's rhythm, from the early trade to the Saturday evening peak. Turnover doubled year on year.

Edinburgh Festival Fringe · August

The Mound Village

An Apex retail concept. A full site under the castle for the whole of the Fringe: bars, street food, brand partners and live performance, from concept to derig.

The Mound is built around dwell time. People come earlier and stay longer because there's somewhere to eat, drink, watch a show and dance, all in one place. That's where the spend is. Forty thousand beers served across the season, with turnover doubled year on year. Give us a bigger space and the same concept scales.

Walk through

Thirty seconds on the Mound

From Princes Street Gardens, up past the National Gallery and into the village. Bars, traders, performers and a full crowd on an ordinary August afternoon.

This is what an Apex site looks like when it's trading, and what we'd build at yours.

Royal Berkshire Polo Club · June 2026

Diageo at the Polo

Two fully branded Diageo bars, built and run end to end by Apex in partnership with SBS, in a field of premium sponsor bars. Draught Guinness and Guinness 0.0, Casamigos Margaritas and Palomas, and four signature serves across cocktails, stout and low and no.

An Apex crew on the bar gave full control of quality and guest experience, and it showed. Feedback on the drinks and the serve was strong all day, Casamigos cocktails drove three in four drinks, and Guinness 0.0 took a fifth of Guinness volume. The brand team's read was that the service engagement was unlike anything they'd seen from a bar operator, and there's a case for doing it again at scale.
